Well after a long conversation with Goodyear technical I have learnt something today, everyday's a school day.
To find out the age of your tyres you can see this on the sidewall.
The tyre will say something like DOT NDDD 2JX2 2500
Basically the 2500 means they were made in the 25th week of 2000.
Goodyear and several other manufacturers do not recommend using tyres over 5 years old regardless of wear or condition.

Cheers for the info Simon. I have read something along those lines on Prime, I believe DOT stands for Department of Transport ( US ) if I remember correctly.

The same can be found on race tyres (bikes anyway) which is useful if you ever get on track and someone has a 'fresh set' or tyres going cheap;)
Got this on storing tyres if anyone's interested.
Mounted tires should be hung on tyre trees or stacked horizontally one
on top of the other. They should not be stored upright, on end, as
this leads to profile deformation and weight imbalances.
On the other hand, unmounted tyres should be stored upright, on end,
and turned every 4-6 weeks to prevent flat spots. They should not
be stacked horizontally nor should they be hung on tyre trees as this
will either damage or deform the casing.
To minimize aging, tires should be stored in a cool, dry place (15-25
deg C / 60-80 deg F), away from heat sources. The tyres should be
protected from oil, grease, paint, fuel and such, as well as, direct
sunlight and artificial light with a high UV-content. Oxygen and ozone
are particular damaging to rubber. For that reason, the storage area
should be only moderately ventilated.
Recommend black stretch wrap if you are really serious:cool:
